Italian Ricotta Cookies

IMG_2649Cookie Dough:

  • 1 cup butter
  • 1 3/4 cups granulated sugar
  • 2 eggs
  • 15 oz. Whitehall Specialties 807 Organic Ricotta Cheese
  • 2 Tablespoons pure vanilla extract
  • 1/4 teaspoon almond extract
  • 4 cups all-purpose flour
  • 1 teaspoon baking powder
  • 1 teaspoon baking soda
  • pinch salt

Glaze:

  • 4 Tablespoons milk
  • 1 1/2 cups powdered sugar
  • 1 teaspoon almond extract
  • colorful candy sprinkles

Preheat oven to 350 degrees.  In a bowl, cream together butter, sugar, eggs, Whitehall Specialties 807 Organic Ricotta Cheese, and flavored extracts.  In another bowl, combine the flour, baking powder, baking soda, and salt.  Incorporate into the butter and ricotta mixture a bit at a time.  Refrigerate dough until firm.  Roll dough into approximately 1-inch size balls and place on an ungreased cookie sheet.  Bake for about 10 minutes until set and very lightly browned.  For glaze, beat together milk, powdered sugar, and almond extract until smooth.  Spoon over warm cookies and top immediately with the candy sprinkles. Enjoy!!
