Cream Cheese Coronado Dip

 

Imitation Cheese Shreds
2 lbs. chicken breasts, cubed
3/4 cup water
1 envelope taco seasoning
1 tsp lime zest
juice from 1 lime
1 T milk
1 medium tomato, chopped
3 green onions, sliced
1 small red pepper, diced
4 oz. jar sliced black olives
tortilla chips
In a large skillet, bring chicken, water, and taco seasoning to a boil.  Reduce heat, cover, and simmer for about 25 minutes.  Cool slightly and shred chicken.  Place Whitehall Specialties 851 Cream Cheese Replacer, milk, lime zest, and lime juice in a large mixing bowl.  Beat with an electric mixer until smooth and creamy.  Spread creamy mixture onto the center of a round platter.  Surround with the shredded seasoned chicken.  Top and garnish with tomato, peppers, onion, and olives, as desired.  Sprinkle with Whitehall Specialties 544 Pasteurized Process Salad Bar Shreds.  Serve with tortilla chips.  Refrigerate leftovers.
